I don't know about you but I get bored with breakfast. I need variety, rarely do I eat the same thing 2 days in a row. Unlike my father who has literally ate the same thing for breakfast for years. He is just like clockwork, which is endearing about him, but I do not take after him. For years I didn't even eat breakfast. I thought that if I didn't start eating I wouldn't eat as much in a day. It wasn't true I just ate more later in the day, but it was my thought process. After I started trying to lose weight I realized that breakfast was important to my day. Especially after I started working out in the morning, you need fuel when you are burning calories. My choices go from a smoothie, to an omelet, to pancakes or sometimes sprouted grain toast with nut butter and fruit.
Smoothies for me are very changeable and easy. Yesterday I made a delicious one after I worked out. It doesn't have a name, but here is the recipe
1 cup unsweetened almond milk
1 scoop pea protein
1 cup frozen strawberries
1/2 orange
1/2 avocado
Sometimes I like omelet with spinach and mushrooms. I top it with chickpeas(great source of protein) and avocado slices. Eggs and bacon is great also. We have fresh bacon from our farm, but other wise buy bacon that is uncured nitrate free. I also make pancakes made with coconut flour, or just a grain free sugar free recipes
Pumpkin Pancakes(Primally Inspired)
4 eggs
1/2 cup pumpkin, butternut squash, or sweet potato
1 1/2 teaspoon vanilla
2 Tablespoons maple syrup ( or sugar free version 1 very ripe banana mashed)
1 Tablespoon pumpkin pie spices or mixture of your own choosing
heaping 1/4 tsp baking soda
Whisk all ingredients together until well blended. Melt coconut oil in skillet. Spoon batter into desired size pancake. Flip when bubbles and finish cooking Top with butter in you choose( real butter) and Maple syrup.
