Special occasion are always challenging. Birthdays, weddings, holidays etc. The food is most generally not good for you. I experimented this weekend with making my husband a cheesecake in a healthier version. Now mind you it is not something you should consume everyday... but it was really good. Here is the recipe.
Cheesecake Mini's with Caramel Glaze
Crust
2/3 cup graham crackers ( I could not find organic ones at Kroger so I bought Annie's bunny grahams and crushed them up)
3 tablespoons Real butter( I used Kerry gold)
Filling
8oz cream cheese
1/4 cup organic sugar ( I am going to try just honey the next time and see if it sets up)
2 eggs( from our hens)
1/4 cup heavy whipping cream (organic)
1/4 teaspoon Real Vanilla Extract
Mix melted butter and crumbs together Put a spoonful in cupcake liner and press down. Bake at 350 degrees for 5 minutes then remove from over
Mix all ingredients together for filling Beat with a mixer on medium until smooth Spoon into cupcake liners until half full. Bake @ 350 degrees for 18-20 minutes
Caramel Glaze
2 tablespoons honey/maple syrup
2 tablespoons butter or ghee
2 tablespoon heavy whipping cream
1/2 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
pinch of salt
Can use arrowroot powder to thicken if you wish.
Melt butter in kettle on stove. Add whipping cream, cinnamon, salt, and vanilla. cook until starts to thicken remove from heat then add honey.
